Linda, I really enjoyed reading the history of Morocco, and about the tagine and recipes. I have had food cooked in a Tagine before but never owned one. These recipes sound great.
I found how to make “preserved lemon” particularly interesting. Oh, I notice you often mention “kosher salt.” In all my years on the planet, I have never seen this in a supermarket. Maybe it is called something else here, or not available?
… Okay an online search shows that it is available here at Woolworths, but may also be called “Maldonado sea salt.” I am learning all the time. I don’t shop at Woolworths often, but at least I know where to buy it now.
