Ted, I am always being surprised about the differences here in Australia to America and other countries.

We can’t buy pre-boiled eggs here anywhere - at least I have never come across them in all my years.

Also, there is no price differentiation due to egg colour. In fact a carton of eggs from the store may contain half brown and half white eggs. We only pay extra for free range or organic over cage eggs.

I agree though, that not all eggs are the same for peeling. I always have them immersed in cold water while peeling with a tea spoon.

Sometimes the shell comes off smoothly and easily, other times you lose chunks of egg as the spoon refuses to slip easily between the shell and membrane.

I hadn’t thought about it, but maybe brown eggs do peel easier.
